“We moved to the cloud” can mean renting a virtual machine, using a managed database or subscribing to finished software. In IaaS the provider runs data centers, hardware and virtualization while you manage the operating system, patches, network rules and applications. In PaaS the provider also runs the operating system and runtime; you bring code and data. In SaaS you use the software itself and manage users, permissions, configuration and data.
The shared responsibility model sums it up: the provider is responsible for security of the cloud, the customer for security in the cloud. Identity and data always remain with the customer, which is why MFA and least privilege matter in every model. A common misconception is that SaaS data needs no backup; provider redundancy protects against platform failures, not user deletion or ransomware, so an independent backup following the 3-2-1 rule is worth considering. Most organizations combine all three models, and writing down a responsibility matrix for each service prevents confusion during incidents.
